Keto Cheese Danishes • Low Carb with Jennifer (1)

Fathead dough is so versatile because it can be moulded into different shapes. But, no doubt about it, fathead dough tastes like cheese! What better recipe to make with fathead dough than cheese danish!

HOW TO MAKE KETO CHEESE DANISH

I love all things danish but as we know they are packed full of calories!

Now you can enjoy this keto friendly danish without all the fuss about carbs!

Lets get started! Preheat your oven to 400F.

Now let's make the fathead dough. In a large microwave safe bowl, add in the mozzarella cheese, almond flour, and salt. Mix well.

Place your cream cheese on top of the mixture and microwave on high for 1 minute.

Stir and heat for another 30 seconds more if not completely melted.

When the dough is cool enough to handle, add in the egg and mix well with your hands. Try not to get any shell in yours like I did!

Dump the dough onto a piece of parchment paper or Silicone baking mat and divide it into 6 even sections.

Use your hands to press the dough into circles. Use the back of a spoon and put a little dip in the center.

Bake in the oven for 10 minutes.

While the dough is in the oven..

Make the cream cheese topping by combing the cream cheese, powdered sweetener and heavy cream in a small bowl. Mix with a hand mixer until it is smooth.

Remove the pastries from the oven and top evenly with the cream cheese topping.

Put back in the oven and cook for an additional 10 minutes.

Remove from the oven and use a butter knife to spread out the cream cheese topping.

Let cool on the sheet pan completely before serving.

Hi Jennifer, can you clarify which powdered sugar substitute you use? When I follow the link, it takes me to the Classic Lakanto.
    Thanks, M.

These came out delicious! Even my non-keto family loves them! I could eat the topping by itself and the dough consistency is very good! I watched the video where you say to add the sweetener the same time as the egg. Thank you Jennifera!

Could this be done in a stand mixer so hands aren’t necessary? I hate the egg all over my hands!!!

Hello! When do we add the sweetener to the dough mixture, before or after microwaving? The recipe instructions do not specify, a few other commenters have asked as well. Thank you!

Omg, SO yum! I only had brown Swerve & shredded monterrey jack, so I substituted those, but they still came out delicious. I also missed the intro of the sweetner into the dough, but I don't feel like they really needed it. I topped mine with a single raspberry each. Amazing!

can't wait to make these. I had another recipe but it used stevia, the danish looked beautiful, the texture perfect bot the taste of the stevis ruined it! Thank you for sharing a recipe that does not call for Stevia

I’ve made this twice now and it’s quite yummy! Only thing is the directions do not mention at what point you add the sweetener to the dough. I add it in the first dry ingredient phase and it seems to work just fine

I just made this today, very delicious! I'm wondering about your nutrition information. You list a serving as 8 grams. My serving was about 48 grams. Is the nutrition information per 1/8 of the recipe instead of 8 grams?

    Reply

    • jenniferbanz says

      It should be 8 servings

Just made and ate the Keto cheese danish. Wow! You get the golden spoon and swoon for this one. So satisfying with a cup of coffee. I did add some vanilla and cinnamon to the cream cheese topper. Maybe next time I’ll try lemon zest, many possibilities. What else do you use fathead dough for?

    Reply

    • jenniferbanz says

I am so happy to hear that, Judy! I have used fathead dough for cinnamon rolls, pizza bites, calzones, Bagels (although they taste like cheese)

This looks amazing!! Question tho, the ingredients say 1/4c sweetener for the pastry but the instructions don't mention when to add it in? Thanks for sharing!
